Chicken Piccata

New Dinner #2: Chicken Piccata (from: The Taste of Home COOKBOOK)

Ingredients:
1/2 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 eggs
6 tablespoons lemon juice, divided
4 boneless skinless chicken breast halves (6 ounces each)
1/2 cup butter
2 teaspoons chicken bouillon granules
1 cup water

1) In a shallow bowl, combine the flour, garlic powder and paprika; set aside. In another shallow bowl, beat eggs and 2 tablespoons lemon juice. Dip chicken in egg mixture, then coat with flour mixture.
2) In a large skillet, brown chicken on both sides in butter over medium-high heat. Combine bouillon, water and remaining lemon juice; pour over chicken. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until juices run clear.
Yield: 4 servings

My Thoughts: Excellent! James and I had this for dinner last night and really enjoyed it. Although it isn't the most healthy thing we can eat, it was pretty easy to make and was very tasty! I cut the recipe in half since I was just making it for the 2 of us. In doing this, I almost ran out of the flour mix but everything else seemed to be just perfect for the 2 pieces of chicken. We paired our main dish with a side of corn, butter noodles, and honey butter biscuits. It was delicious and our tummy's were definitely full afterwards. I highly recommend this dish if you are looking for something slightly unhealthy, pretty quick, and quiet yummy! :)
