New Dinner #3: Chicken Parmigiana (from: The Taste of Home COOKBOOK)
Ingredients:
1/2 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
3/4 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 cup egg substitute
4 boneless skinless chicken breast halves (4 ounces each)
1 jar (26 ounces) meatless spaghetti sauce
3/4 cup shredded part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese
1) In a shallow bowl, combine the bread crumbs, grated Parmesan cheese, Italian seasoning, garlic powder and salt. In another bowl, beat egg substitute. Dip chicken in egg substitute, then roll in crumbs.
2) Place in a 13-in. x 9 in. x 2-in. baking dish coated with nonstick cooking spray. Bake, uncovered, at 375 degrees for 10 minutes. Turn chicken; bake for 10 minutes.
3) Pour spaghetti sauce over chicken; back for 5 minutes. Sprinkle with cheeses; bake 10 minutes longer or until chicken juices run clear.
Yield: 4 servings
Editor's Note: If you prefer, use 1 slightly beaten egg for the egg substitute.
Results:
My Thoughts: YUM! :-) James and I had this for dinner tonight and really enjoyed it. Again, I cut all of the ingredients in 1/2 since I was only cooking for 2. I did not use the mozzarella cheese the recipe calls for-just as I was about to use it, I realized that it had gone bad. I was disappointed but even without this particular cheese, the chicken was still delicious. We paired it with spaghetti noodles & the leftover sauce and french loaf bread. With very little prep-work, this was an easy meal to make...the only downside is, you can't just put it in the oven and bake it for 30 minutes. You have to continually go back to turn the chicken, add the sauce, and then add the cheese. But, it's well worth it in the end!!
