Ingredients:
1 small onion, chopped
1 medium garlic clove, finely chopped
1 tbsp margarine
1 lb boneless skinless chicken breasts, cut in 4 servings
1/8 tsp salt
1/4 tsp black pepper
2 tbsp fresh cilantro, snipped (if desired)
1) In a skillet, cook onions and garlic in margarine until onion is tender.
2) Add chicken, salt, and pepper. Cook and stir over medium-high heat about 5-10 minutes. Stir in cilantro. Garnish with a lemon wedge if desired.
Yield: 4 servings
Grilled Summer Squash & Zucchini (from: dlife-For Your Diabetes Life)
Ingredients:
3 Squash, summer, fresh, medium, FDA (combination of zucchini and squash)
1 medium garlic cloves, minced
1/2 tsp paprika
1/2 tsp ground cumin
2 tbsp olive oil
1tbsp fresh lemon juice
1) Slice the squash in halve; keep skin on.
2) Whisk together garlic, paprika, cumin, olive oil, and lemon juice.
3) Preheat grill and arrange squash on grill. Grill 5 minutes per side and coat each side with sauce.
Yield: 6 servings
Additional Information: Make sure to use only fresh squash. Try this with broccoli too.
Results:
My Thoughts: James and I made this healthy meal for dinner tonight and really enjoyed it. Obviously, the recipe needs to be cut down in order to have the correct amount for the number of people you are serving. If you go to the website mentioned above, it allows you to put this number in and it will give you the proper measurements. I am not sure why we did not do this tonight-I just followed James' lead and didn't measure anything. Instead of grilling the squash & zucchini, we sauteed it. We also paired this meal with a fresh salad. This is an easy recipe that requires little prep time and is pretty tasty-we definitely recommend you trying it!
