New Dinner #6: Baked Shrimp (from: dlife For Your Diabetes Life)
Ingredients:
1/2 1b raw medium shrimp, de-veined
1 tbsp butter, unsalted
1 medium garlic clove, minced
1 tsp fresh lemon juice
1 tbsp chopped parsley
1 tsp grated Parmesan cheese
1) Rinse shrimp under cool water, remove shells.
2) Preheat oven to 350 degrees F.
3) In casserole dish, combine butter, garlic, lemon juice, and parsley. Place dish in oven until butter melts.
4) Add shrimp and bake, covered 10-12 minutes.
5) Remove from oven, sprinkle Parmesan on top.
Yield: 2 servings

My Thoughts: Turns out, I forgot to top our shrimp off with Parmesan Cheese. James and I are both disappointed...although it was a pretty good dinner, we think the Parmesan might have made it even better. This meal is a lot like Shrimp Scampi. We did add a little salt & pepper for a little more flavor. We paired it with brown rice, sauteed zucchini, bell pepper, and squash. This is a very quick and easy recipe and it tastes pretty good. If you try it and add the cheese, let us know how it turns out! ;-)

I cooked this tonight and I also almost forgot the Parmesan cheese. I remembered after I had a few bites and it is better with it. Oh and thanks for the tip on the vegetables. They were pretty tasty. Look forward to more recipes.
Yay! I'm so glad that people are getting good use out of me posting these recipes...and actually liking them!!! They will probably be few and far between now that I've started back to work but I'll try to as often as possible. Glad you enjoyed it! :-) Oh, and next time I'll definitely have to remember the Parmesan cheese ;-P
